Makes a 20cm circle tin or square tin. Serves 10 to 12




Ingredients

  • 1 cup sugar
  • 100g butter (melted or softened)
  • 3 eggs
  • 6-8 Feijoas (mashed) or 2-3 bananas
  • ½ cup warm milk
  • 1 teaspoon of baking soda
  • 150ml yoghurt (apricot)
  • 2 cups of plain flour
  • 3 teaspoon of baking powder

Method

  1. Preheat oven to 180C
  2. Put baking paper on the base of the cake tin and grease the sides.
  3. Cream butter and sugar together. Add eggs, add yoghurt.
  4. Dissolve the baking soda into the warm milk and add this to the bowl.
  5. Add Mashed Feijoas and stir together to combine.
  6. Sift the flour and baking powder into the wet mixture and mix all together.
  7. Bake 50-60 mins. Check after 40 mins to see if the cake is done.
  8. ICING:
  9. 1 tablespoon of cream cheese
  10. 1 teaspoon of butter
  11. Zest of one lemon
  12. Mix the butter and cream cheese together. Add the lemon zest. Add the icing sugar 1 to 2 tablespoons at a time to make a nice smooth icing.
