Feijoa Cake (courtesy of Kim Robinson)
Makes a 20cm circle tin or square tin. Serves 10 to 12
Ingredients
- 1 cup sugar
- 100g butter (melted or softened)
- 3 eggs
- 6-8 Feijoas (mashed) or 2-3 bananas
- ½ cup warm milk
- 1 teaspoon of baking soda
- 150ml yoghurt (apricot)
- 2 cups of plain flour
- 3 teaspoon of baking powder
Method
- Preheat oven to 180C
- Put baking paper on the base of the cake tin and grease the sides.
- Cream butter and sugar together. Add eggs, add yoghurt.
- Dissolve the baking soda into the warm milk and add this to the bowl.
- Add Mashed Feijoas and stir together to combine.
- Sift the flour and baking powder into the wet mixture and mix all together.
- Bake 50-60 mins. Check after 40 mins to see if the cake is done.
- ICING:
- 1 tablespoon of cream cheese
- 1 teaspoon of butter
- Zest of one lemon
- Mix the butter and cream cheese together. Add the lemon zest. Add the icing sugar 1 to 2 tablespoons at a time to make a nice smooth icing.
