Ingredients
- 400g frozen edamame beans
- 2 Tablespoons of olive oil
- 1 clove of garlic
- 1/4 cup of lemon juice
- ½ tsp of sesame oil
- ¼ cup water
- 1/3 cup fresh chives
- Salt and pepper
Method
- Shell the thawed beans and place in a large bowl of boiling water. Stand for 4 minutes. Drain well.
- Process beans with sesame oil, olive oil, garlic, lemon juice, water, salt and pepper until the mixture is a course puree.
- Roughly chop the chives and stir most through the dip. Save a tablespoon to sprinkle over before serving with crackers.
