Edamame Dip

Makes 2 cups

Ingredients

  • 400g frozen edamame beans
  • 2 Tablespoons of olive oil
  • 1 clove of garlic
  • 1/4 cup of lemon juice
  • ½ tsp of sesame oil
  • ¼ cup water
  • 1/3 cup fresh chives
  • Salt and pepper

Method

  1. Shell the thawed beans and place in a large bowl of boiling water. Stand for 4 minutes. Drain well.
  2. Process beans with sesame oil, olive oil, garlic, lemon juice, water, salt and pepper until the mixture is a course puree.
  3. Roughly chop the chives and stir most through the dip. Save a tablespoon to sprinkle over before serving with crackers.
