Easy Sultana (or Fruit) cake - Recipe from Karen McQuigg

Ingredients

  • 450g Sultanas (or mixed fruit)
  • 250g Butter
  • 1 ½ cups sugar
  • 1 tablespoon Golden syrup
  • 1 teaspoon vanilla essence
  • 3 eggs
  • 3 cups Flour
  • 1 teaspoon baking powder
  • Water (approx ¼ cup, or just enough to cover fruit)

Method

  1. 1. Put sultanas or mixed fruit in a pot and add just enough water to cover the fruit. Cover with lid and bring to the boil. Boil for about 5 minutes.
  2. 2. While fruit is heating, mix sugar, golden syrup, eggs and vanilla essence together.
  3. 3. Chop the butter into pieces.
  4. 4. Once boiled drain most of the water off the fruit (it doesn’t matter if a little water is still left). Add chopped butter immediately and cover the pot again until the butter is melted.
  5. 5. Add the fruit and butter to the sugar/egg mixture. In a different bowl, mix the flour and baking powder. Add everything together and mix.
  6. 6. Line a round or square standard cake tin and add cake mixture. Bake at 175 C for approximately 1 ½ hours.
