Custard Squares

Makes 16 squares


Ingredients

  • 2 sheets of flaky puff pastry
  • 600ml of milk
  • 4 tablespoons of custard powder
  • 2 tablespoons of icing sugar
  • Splash of vanilla essence
  • ICING
  • 2 cups of icing sugar
  • 15g butter
  • Splash of water
  • 1 tablespoon of cocoa, or 1 teaspoon of lemon juice or vanilla essence

Method

  1. Place the pastry sheets on greased oven trays. Prick all over with a fork.
  2. Bake for 10 to 12 minutes at 200 degrees Celsius.
  3. Place 2 cups (500ml) of milk in a sauce pan and heat.
  4. Put custard powder and icing sugar in a small bowl and dissolve in the 100 ml left over milk. Pour this into the warm milk and stir until it gently boils.
  5. Continue to stir and gently cook for 5 mins.
  6. Leave until cold and place on top of one sheet of cooked pastry. Top with the other sheet of pastry.
  7. Ice with your favourite flavour icing.
