Heat oil in a large frying pan over medium heat. Fry the onion, add garlic then red and green capsicums.
Mix through and add coriander, tin of tomatoes, water and black beans.
Add ½ of a packet of the Taco mix (or more if you like it spicier!) and mix well until warm through. Allow the flavours to develop & for the sauce to thicken. Reduce the heat to low.
Using a spoon, make a hole in the sauce and crack an egg into it. Repeat with remaining eggs. Using a fork, drag egg whites to allow them to mix slightly with the sauce. Simmer for 10-12 minutes or until eggs are cooked to your liking. Scatter over parsley.
