Cowboy Brunch Eggs

Serves 4

Ingredients

  • 1 green & 1 red capsicum, sliced
  • 1 onion, sliced
  • 1/2 packet of Taco (Mexican Spice Mix)
  • 2 teaspoons of garlic
  • 400g can diced tomatoes
  • 400g can black beans
  • 2 tablespoons of coriander
  • 1/2 cup of water
  • 2 tablespoons of parsley, to serve
  • 4 – 8 eggs

Method

  1. Heat oil in a large frying pan over medium heat. Fry the onion, add garlic then red and green capsicums.
  2. Mix through and add coriander, tin of tomatoes, water and black beans.
  3. Add ½ of a packet of the Taco mix (or more if you like it spicier!) and mix well until warm through. Allow the flavours to develop & for the sauce to thicken. Reduce the heat to low.
  4. Using a spoon, make a hole in the sauce and crack an egg into it. Repeat with remaining eggs. Using a fork, drag egg whites to allow them to mix slightly with the sauce. Simmer for 10-12 minutes or until eggs are cooked to your liking. Scatter over parsley.
  5. VARIATIONS: Serve with toast or special breads and your favourite herbs / spices.
