Corned Beef (Silverside) with Mustard sauce
Serves 6
Ingredients
- 1.3kg piece of corned Silverside
- 2 bay leaves
- 1 tablespoon of malt vinegar
- 1 tablespoon of brown sugar
- 4 black peppercorns
- FOR THE SAUCE
- 1 cup of cooking liquid
- 30g butter
- 2 tablespoons of flour
- 2 teaspoons of mustard
Method
- Put Silverside in a large pot and cover with water. Add the vinegar, sugar, peppercorns and bay leaves.
- Cover with the saucepan lid and bring the water to the boil. Then turn down the heat and simmer for about 1 ½ to 2 hours or until the meat is tender.
- Drain and save 1 cup of the cooking liquid to make the mustard sauce.
- In a separate sauce pan, melt the butter.
- Stir in the flour until the mixture bubbles. Add the mustard and then slowly add the cooking liquid while stirring.
- Keep stirring until the sauce is smooth and thickened.
- VARIATIONS: Half an hour before the meat is ready add carrots and onions. Serve with the meat.
