Christmas Ice Cream Pudding

Serves 6


Ingredients

  • 4 Cups of vanilla ice cream
  • ¾ cup of fruit cake mix
  • 2 Christmas mince pies - broken into chunks
  • 150g of Christmas pudding- broken into chunks

Method

  1. Line a 5 cup capacity bowl or mould with Glad Wrap. (if it wont stick to the bowl try spaying first with cooking spray)
  2. In a large bowl, add the softened ice cream. Add the dried fruit mix, mince pies and Christmas pudding. Gently stir through. (try not to break up the pie and pudding pieces too much)
  3. Put mixture into the prepared bowl and cover with foil.
  4. Place in the freezer overnight.
  5. To serve the pudding, invert on a serving plate and carefully remove the Glad Wrap. Decorate the sides with evenly spaced cherries, almonds and ginger.
  6. Decorate with fresh cream and berries.
  7. VARIATIONS:
  8. Any combination of dried fruit can be used eg apricots or cranberries.
  9. Any flavour ice cream can be used…try rum and raisin!
  10. Add a tablespoon of your favourite liquor.
