Cauliflower Fried Rice with Prawns

Serves 4


Ingredients

  • 1 large cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 4 eggs
  • 2 splashes of fish sauce
  • 4 rashers of bacon
  • 200g peeled prawns
  • 1 onion
  • 1 teaspoon crushed garlic
  • ½ red capsicum
  • 1 teaspoon crushed ginger
  • 3 tablespoon soy sauce
  • Ground white pepper & salt, pinch
  • 2 Spring onions, thinly sliced
  • 2 tablespoons chopped coriander
  • 1 long red chilli and lemon wedges to serve (optional)

Method

  1. Break florets into small pieces of cauliflower and put in a food processor to pulse until it resembles rice and set aside.
  2. Whisk 4 eggs with a splash of fish sauce and pour in a large wok with oil. Cook until two sides are lightly brown like an omelette. Remove from wok, cut into thin strips or diced and set side on plate.
  3. Add the bacon and fry until crispy, dice and set aside.
  4. Wipe the wok clean with a paper towel. Add a little splash of oil and sauté the prawn for two minutes, or until lightly golden and almost cooked through. Remove from wok and set aside.
  5. Prepare the vegetables; chop and diced the onion, capsicum, chilli, spring onions and fresh coriander leaves. Put each in small individual bowl or plate.
  6. Heat the remaining oil from prawns, add the onion and garlic and cook for 3 minutes, or until soften. Stir in the capsicum and ginger and cook for 3 minutes until soften.
  7. Add the cauliflower rice and cook for a few minutes until tender. Add soy sauce, pinch of white pepper/salt, spring onion, and coriander. Stir over for few minutes then adding bacon, prawn and omelette and stir-fry until well combined and heated through for few mins.
  8. Serve with lemon or lime wedges and chilli sprinkles on the top.
  9. VARIATIONS: Use any vegetables or herbs you have!
