Caribbean Rum Chicken (courtney of Jon)

Ingredients
1 whole Chicken
1/2 tsp rosemary
1/2 tsp thyme
1/2 tsp Oregano
1 tsp smoked paprika
1 tbsp garlic minced
Rum mixture
3 tbsp honey
4 tbsp rum
juice from 1 lemon
75g butter
Method
1. Preheat the oven to 180oC.
2. Place the chicken into a roasting dish.
3. Add all the dry ingredients and garlic in a bowl. Stir together and coat the chicken.
4. Place the lemon juice, honey and rum into a bowl and stir together, pour over the chicken, making sure the chicken is well coated with this flavour.
5. Melt the butter and coat the chicken evenly.
6. Place in the oven and bake for about 1 1/2 hours. Baste the chicken a few times with all the lovely juices. This will make it golden brown and full of flavour.
