Cabbage and Carrot Relish
This recipe serves 4.
Ingredients
- 1 onion, sliced
- ¼ cabbage, sliced
- 1-2 carrots, grated
- ½ cup of raisins
- 1 teaspoon of ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon of ground allspice
- ½ cup of water
- 1 teaspoon of oil
- Salt and pepper
Method
- In a pot over medium - high sauté the onion in the oil until soft and beginning to caramelise. Add the spices and stir into the onion mixture.
- Add the cabbage and mix until the cabbage becomes tender. Add the water and raisins, reduce the heat to low.
- Allow the mixture to absorb the water and become think and flavourful. Add the carrot and season with salt and pepper.
- Delicious with fish, chicken & vegetarian dishes.
