Butter Cookies

Makes 20 biscuits

Ingredients

  • 250g butter
  • 1/2 cup of sugar
  • 2 ΒΌ cups of flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of vanilla essence
  • 3 tablespoons of sweetened condensed milk (or 3 tablespoons of milk)

Method

  1. Preheat the oven to 160 degrees.
  2. Cream the butter and sugar.
  3. Add all the other ingredients and mix until it comes together in a ball.
  4. The dough can be rolled in balls and baked as small cookies or roll the dough out to 4mm think and using cookie cutters make your shapes.
  5. Bake for 15 to 20 mins on lined trays.
  6. The biscuits can left plain or iced using fondant icing or buttercream.
  7. VARIATIONS: The dough can be frozen until it is needed.
  8. Add 2 teaspoons of ground ginger and 4 tablespoons of chopped crystallised ginger to make ginger cookies.
