Butter Cookies
Makes 20 biscuits
Ingredients
- 250g butter
- 1/2 cup of sugar
- 2 ΒΌ cups of flour
- 2 teaspoons of baking powder
- 1 teaspoon of vanilla essence
- 3 tablespoons of sweetened condensed milk (or 3 tablespoons of milk)
Method
- Preheat the oven to 160 degrees.
- Cream the butter and sugar.
- Add all the other ingredients and mix until it comes together in a ball.
- The dough can be rolled in balls and baked as small cookies or roll the dough out to 4mm think and using cookie cutters make your shapes.
- Bake for 15 to 20 mins on lined trays.
- The biscuits can left plain or iced using fondant icing or buttercream.
- VARIATIONS: The dough can be frozen until it is needed.
- Add 2 teaspoons of ground ginger and 4 tablespoons of chopped crystallised ginger to make ginger cookies.
