• 1 kg of skinless chicken thigh or breast cubed into bite sized pieces
• 3 tablespoons of soy sauce
• 1 or 2 red chilli, finely sliced with seeds removed
• 3 tablespoons of vegetable oil
• ¼ cup of brown sugar
• 1/3 cup of finely sliced fresh ginger
• 1 large red onion finely sliced
• Splash of water (about 2 tablespoons)
Method
In a bowl, mix the chicken with the soy sauce and chilli (if using). Set aside.
Mix the oil and sugar in a large cold pan and add to medium high heat. As soon as the sugar melts, carefully add the chicken, ginger and onion.
Stir briefly and add the splash of water. Keep stirring on medium high heat for 10 to 12 minutes until the glaze becomes rich and coats the chicken perfectly.
