Apple Crumble Cookies

Makes 24

Ingredients

  • 100g dried apple
  • 200g self-raising flour this can be gluten free flour if you wish
  • 100g cubed butter
  • 100g caster sugar
  • 1 large egg

Method

  1. Preheat the oven to 200c
  2. Line two oven trays with baking paper.
  3. Put dried apple in a food processor and process until finely chopped.
  4. Then add flour, sugar and cubed butter into the processor to mix for 1 minute.
  5. Remove 3 tablespoons of the crumb mixture and save for the top of the cookies.
  6. Stir in the egg until combined well.
  7. Divide the dough into 24 pieces and roll into balls. Press the balls down and sprinkle with the topping.
  8. Bake for 8-10 mins or until golden
  9. Variation: Cinnamon, nutmeg, dried apricots or figs.
