Apple Crumble Cookies
Makes 24
Ingredients
- 100g dried apple
- 200g self-raising flour this can be gluten free flour if you wish
- 100g cubed butter
- 100g caster sugar
- 1 large egg
Method
- Preheat the oven to 200c
- Line two oven trays with baking paper.
- Put dried apple in a food processor and process until finely chopped.
- Then add flour, sugar and cubed butter into the processor to mix for 1 minute.
- Remove 3 tablespoons of the crumb mixture and save for the top of the cookies.
- Stir in the egg until combined well.
- Divide the dough into 24 pieces and roll into balls. Press the balls down and sprinkle with the topping.
- Bake for 8-10 mins or until golden
- Variation: Cinnamon, nutmeg, dried apricots or figs.
